Gluten free gingerbread cookies

Soft gingerbread cookies that are just the right amount of spicy, sweetened with maple syrup, and completely gluten-free! They're the perfect addition to any cookie exchange or festive holiday party!

Gluten free gingersnaps

Ingredients

  • 2 cups organic oat flour
  • 1/2 cup coconut oil melted
  • 3 tsp Moodbeli Calming Adaptogen
  • 2 tbsp ground ginger
  • 2 tbsp ground cinnamon
  • 1/2 tbsp ground cloves
  • 1/2 tsp sea salt
  • 3 tbsp maple syrup
  • 2 tbsp blackstrap molasses

Instructions

  1. Preheat oven to 375 and grease a cookie sheet with some coconut oil.
  2. In a large bowl, whisk together oat flour, Moodbeli, ginger, cinnamon, cloves, and sea salt.
  3. Add in coconut oil, maple syrup, and molasses into the dry ingredients bowl and knead with your hands until it is a soft dough.
  4. Roll about a tablespoon of dough and place onto the cookie sheet, and continue for each cookie.
  5. Take the back of the spoon and lightly press down on the top to soften the cookie.
  6. Bake for 15 minutes or until crispy on the outside.
