Eat as a pre-workout snack, afternoon pick me up, or night cap without the sugar crash. A mix of nuts and seeds will keep your belly and brain satisfied. These are both healthy and super easy to make!
Blend, freeze and these no-guilt snacks are ready to be devoured! Bonus, you can add any fruit toppings you like.
Prep Time: 15 minutes
Dry Ingredients
- 2 cups nuts/seeds of choice
- 1/4 cup coconut shreds
- 1 tsp turmeric
- 1/2 tsp Golden Turmeric
Wet Ingredients
- 1/4 cup pumpkin puree
- 1/4 cup coconut oil
Instructions
- Pulse all the dry ingredients in a food processor
- Add wet ingredients blend until fudgy
- Spread into a loaf pan (any size works)
- Add your fruit of choice
- Freeze for an hour or until it hardens
- Cut into squares
- ENJOY! Store in the freezer
Recipe Notes
Soak nuts/seeds overnight before blending (or 6 hours+). Soaking activates the nuts' nutritional bioavailability and makes it easier for the body to absorb them. It also makes the bars extra fudgy! If you have a sweeter tooth, you could add 1-2 tbsp of maple syrup or honey.
