Brave Bars
Whether you're WFH or on the go, finding a quick, filling, and energizing snack that isn't overly sweet always seems harder than it should be. Whip up a batch of these Brave Mood energy bars at the start of the week and you'll have a deeply satisfying snack that's ready to go all week long.
Ingredients
- 3/4 cup creamy peanut butter (or any nut/seed butter)
- 1/3 cup honey (or agave syrup)
- 2 tbsp coconut oil
- 1/8 tsp vanilla
- 2 cups rolled oats
- 1/2 cup Brave Mood probiotic plant protein
- 2 tsps Mushroom Adaptogen (or your favorite Moodbeli adaptogen blend)
- 3 tbls flaxseed
- 1/4 tsp cinnamon
- 1/4 tsp kosher salt
- 2 oz dark chocolate chopped (optional)
Directions
In a medium heat proof bowl, combine peanut butter, honey, coconut oil, and vanilla. Set bowl over a pan of 1-2 inches simmering water and stir mixture until incorporated and smooth. Let cool.
In a separate bowl, combine rolled oats, Brave Mood, Mushroom Adaptogen, flaxseed, cinnamon and kosher salt. Add cooled nut butter mixture to the dry ingredients and stir until everything starts to stick together when pressed against the side of the bowl.
Fold in optional mix-ins. We used dark chocolate but you could add any kind of chopped nuts, seeds, or dried fruit that you like. Line a sheet pan with parchment paper and press mixture into an even layer. Alternatively, press mixture into individual silicon molds, or roll into 1 inch energy balls. Refrigerate for an hour and enjoy!
